Introduction: Rutin is the rutin glycoside of quercetin, a flavonoid compound extracted from plants. It exists in rutin, tartary buckwheat, locust buds, catalpa leaves, tomato stems, leaves and seed shells. The dry buckwheat when it is about to blossom contains about 3%, and Chinese date, hawthorn, ginkgo biloba, wolfberry, motherwort, bupleurum chinense, prunella vulgaris, aloe, gynostemma pentaphyllum, etc. all contain rutin. In the bud of Sophora japonica L., which is a leguminous plant, the content can reach more than 20%, and it is the main raw material for extracting rutin in China's pharmaceutical industry. Rutin can be decomposed with water in case of strong acidity and alkalinity. It is unstable in color in alkaline food and has antioxidant capacity. In ethanol, it can improve the light fastness of pigment preparation, prevent the gradual disappearance or change of fragrance, and can improve its antioxidant capacity when combined with vitamin E. The inhibitory effect of rutin on lipid peroxidation is related to its enhancement of SOD activity and promotion of oxygen free radical scavenging. Xia Weimu and others found that rutin has a strong scavenging effect on O2, and the scavenging efficiency can reach more than 96%. As a chelating agent of Fe2+, rutin can inhibit Fenton reaction and chain reaction of lipid peroxidation, and has obvious anti-lipid peroxidation effect. Many kinds of rutin health food have been developed abroad. Sophora japonica has a strong antioxidant effect on edible oil. The scavenging rate of Sophora japonica extract on free radicals can reach 40%~70%, which can be used as a new edible oil and fat-containing food additive with health care function, and also can be used for cold drinks, beverages, pastries, processed meat products and aquatic products. Tartary buckwheat rutin health care factor has the effects of reducing blood fat, blood pressure, urine sugar and weight loss, and has been developed into delicious and convenient snacks (tartary buckwheat tea, tartary buckwheat rice, tartary buckwheat noodles, etc.). The rutin is hydrolyzed with 2% dilute H2SO4 for 1h, cooled, filtered, precipitated, washed and dried, and the crude product is recrystallized with ethanol to obtain high-quality quercetin. If other flavonoids such as quercetin and α- Mixed tocopherols or catechins can show additive effect.
